This post starts with a big sneeze🤧. Made the easiest chilli oil with  oil, Bydagi chilli flakes, ginger, garlic, and salt. The chili oil is perfect for momos, noodles, and pretty much any dish that you think can use a bit of spice. I use it for my stir fries and it will make a broccoli hater like me like my bowl. Just add a spoonful to chicken, prawns,veggies , ...whatever and I promise you a jumpstart to your palate . This chilli and peppercorns imparts "Mala" to oil. Ma means numbing and La means spicy. Put minced garlic, ginger , peppercorns, salt and chilli flakes in a heatproof bowl. Heat enough vegetable oil to steaming point. Carefully pour over the mixture.The oil will sizzle a lot when it first hits the spices and then fizzle as it cools .Give it a stir before serving. Drizzle the chilli oil over noodles or dumplings and spoon some of the chili flakes onto any dish. To store, transfer the oil into a jar and refrigerate. The oil should keep for several weeks. Enjoy.
